    samphire

The Estate Barn, Blickling Hall, Aylsham, Norfolk NR11 6NF
    E: hello@samphireshop.co.uk

Samphire is founded on four main principles. It stocks only locally produced goods because it believes in seasonality and making a connection, through food, with the environment and the local community.

"We support rare breeds because they thrive in non-intensive, natural farming environments and produce fabulous tasting meat. We believe animals should be raised as naturally as possible.

"By getting to know all of our meat producers, we have seen for ourselves how they enjoy a good life under the Norfolk skies. We support small scale producers because we believe it is important to preserve traditional methods and interesting products.

"As well as great meat we have fresh bread that's baked daily, all the local cheeses, plus milk and cream from the dairy down the road.

"We have wonderful chickens with a flavour you won't forget, smoked fish and local crab plus seasonal fruit and veg. Pork pies, sausage rolls and cakes are cooked daily in our kitchen. Plus we make great picnics that can be eaten in the grounds at Blickling Hall."

    T: 01308 420020

River Cottage is all about food, where it comes from and why that matters. The purpose is to promote a better understanding of the nature and origins of what we eat. The importance of food integrity is the key.

Hugh Fearnley-Whittingstall and the River Cottage team are champions of the 'eat local' philosophy, which often means from the River Cottage garden or farm!

Most importantly, they want to spread the word, and hence River Cottage HQ, where you can spend practical days with the River Cottage team covering subjects such as pig, lamb, mutton butchery, learning about Game, foraging in the nature's larder, fishing and learning how to prepare and cook your catch, building and cooking in your own clay oven, and many more... as well as evening events, seasonal feasts and special events. They also run events for parents and children to enjoy together.

Anne Petch - appalled at intense farming methods in the early 1970s - began producing as much of her own produce on her small farm as possible.

This led to an interest in rearing traditional domestic pigs from breeds that were slowly dying out.

Realising the best way to secure the business' future was to develop a sustainable market for them, they converted an old dairy building into a butchery and launched a home delivery service.

mary  berry's  salad  dressings  &  sauces

    Watercroft, Church Road, Penn, Buckinghamshire
    T/F: 01494 816535
    E: info@maryberry.co.uk

In 1994 Mary and her daughter Annabel launched their Original Family Recipe Salad Dressing quickly followed by Mary Berry's Special Mustard Dressing.

The products, which were originally sold at Mary's Aga Workshops in the early 90s, proved such a success that they decided to sell them nationwide.

For the mother and daughter team it was about "delivering top quality dressings and sauces, using the very best ingredients, with taste being the most important aspect".

The products are GM free, 100% vegetarian, contain free-range eggs and no artificial flavourings or preservatives.

Ten years on, it seems that the rest of the country agree on the taste.

The nine-product range is now UK's leading provider of gourmet salad dressings and sauces, also retailing in Ireland, Germany and the United States.

The products have proved to be popular amongst a wide range of people; mothers, students, bachelors, career women. In fact anyone whose busy life style means they do not have time to devote to cooking and entertaining, but do not want to compromise on flavour.

The dressings are mostly used for salads but popular as a spread for sandwiches instead of butter and as a sauce for pasta.

The sauces can also be used for marinating, basting and dipping; also adding flavour to stirfries and glazing meat before roasting.

Mary Berry's Salad Dressings and Sauces are sold at Waitrose, Lakeland Limited, Harrods, Fortnum & Mason, Chatsworth Farm Shop, as well as selected delicatessens, farmshops and village stores.
